You won’t believe how easy these granola bars are to make. I’ve made these more times than I can count over the last few weeks. They’re healthy enough to pass for breakfast but also make the perfect afternoon snack.
I love the addition of the chocolate chunks but you can really add anything like raisins, nuts or seeds.
Makes 10 bars
2 cups rolled oats
1/4 cup coconut sugar
1 tbsp coconut or plain flour
1/2 cup honey or maple
1 tsp vanilla essence
1/2 cup coconut oil
1 cup chocolate chunks
Add the oats, coconut sugar and flour to a bowl and mix well to combine.
Add in the honey, vanilla and coconut oil and mix together. Finally add in 3/4 cup of the chocolate chunks and mix again.
Tip into a lined baking tray, press down firmly and bake in the oven for 20-25 minutes until lightly golden. Leave to cool.
Melt the remaining chocolate and drizzle over the chocolate. Slice into pieces and store in the fridge.
